'Benne' means butter in Kannada, and this is the dish that made VB Bakery and CTR in Bangalore famous. Unlike the folded masala dosa, this one stays open on the tawa while generous dollops of white butter melt into it, browning the bottom to a deep gold. We top it with soft potato masala and serve it open-face so you can see the crisp lace at the edges. Eat it with your hands — that's the right way.
