The Mysore Masala Dosa is famous for one thing: the fiery red chutney slathered on the inside before the potato masala goes in. Our version uses Byadgi chillies from Karnataka for a deep red colour without the burn, balanced with roasted garlic, coconut, and tamarind. The dosa is crisped on a cast-iron tawa until the edges crackle, then folded around soft, ginger-tempered potato masala. A cult favourite.
